this recipe was inspired by a no-cook root beer bbq sauce i came across from Fine Cooking.
i rarely drink pop, but there are those odd occasions that i crave a fizzy sugary beverage. when those occasions arise, i reach for a root beer. the recipe also included kecap (kejap) manis, a sweet & syrupy Indonesian soy based sauce that i fell in love with during my travels to asia.
i recently used the sauce to coat racks of baby back pork ribs for a family picnic by the lake…. i’d say they were a hit!
sweet, piquant & spicy…. lip-smacking good!
Ginger, Chili & Root Beer BBQ sauce
- 2 T vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 c root beer
- 1 c kecap manis (sweet soy sauce)
- 1 c chili sauce
- 1/4 c sweet chili sauce
- 1 T dijon mustard
- 2 T ginger jam
- 2 T sriracha chili sauce
in a saucepan heat vegetable oil over medium heat and add diced onion. saute until onion is translucent & add garlic. saute for a minute & add root beer. reduce mixture until slightly syrupy, about 5-7 minutes. add remaining ingredients and simmer for another 10 minutes or so until thickened. process with an immersion blender if desired.
until next time….
